產地介紹:嘉義縣八個養殖漁業生產區位於中部最精華的海水養殖區內,沿著海岸線到外傘頂洲有萬餘公頃的潔淨潟湖區與珍貴的紅樹林景觀,不僅提供豐富水文及水產,也孕育了無汙染的天然養殖場所。烏魚和吳郭魚也是嘉義兩大財富。另外豆仔魚、七星鰻魚也創造了銷售的佳績,盛產虱目魚跟草蝦更是虱目魚丸、草蝦丸、炸蝦春捲的新鮮材料。這些新鮮魚貨都是生鮮超市炙手可熱的最愛!

Production site: The eight fish farming districts in Chiayi County are located in the most advantageous region the marine aquaculture. The coastal line extends towards Waisanding Sand Bar, circumscribing the Lagoon and the valuable Mangrove Forest, which provides an excellent fishing environment and sea products. Large-scaled Mullet and Lateolabrax Japonicus are also the best sales, teaming with Milk Fish and Giant Tiger Prawn as fresh materials to make fish/shrimp balls and fried shrimp spring rolls.

【吳郭魚】Mouthbreeder(Tilapia)

吳郭魚即台灣鯛,是美國國家太空總署NASA唯一送上太空戰的魚類,也是台灣出口歐美的大宗;為了讓更多人享受到台灣標準HACCP處理程序的油質魚片,本會與嘉義魚貨包裝場發揮廚藝巧思,運用科學衛生的營養保存方式,推出方便美味的即食量料理包,暢行全國。無論紅燒、酸甜、砂鍋或茄汁燴醬,都能與台灣鯛柔嫩鮮美的肉質完美結合,形成餐桌上一道道佳餚。

Mouthbreeder, alternatively named Tilapia, is the only species that National Aeronautics and Space Administration (NASA) ever sent to International Space Station (ISS). It is also the major merchandise exported from Taiwan to Europe and United States. In order to serve more people with high-quality fillets that go through the HACCP quality standard procedure, we have designed a microwave food that can be instantly served. No matter the fillets is braised in soy sauce, sweet-and-sour grilled, boiled in the sand hotpot or steamed in tomato sauce, its original flavor can always be perfectly coupled with these seasoning. These dishes are highly recommended by the gourmet guests!

【烏魚子】Chinese Caviar

強勁的海風、成千上萬片金光閃閃的魚卵一字排開......這就是冬至前的嘉義。我國曬製烏魚子歷史悠久,近年來由於飼料開發成功,加上魚塭培養烏魚抱卵的技術已相當成熟,使得養殖烏魚也步入市場-濕軟適中、赤黃而有透明感的台灣烏魚子抹上米酒,放入烤箱稍加烘烤之後,切片搭配生蒜或生白蘿蔔切片,味道好、口感佳、再溫上一瓶酒…正是隆冬好滋味!
The golden shiny dried mullet roe, either called Chinese Caviar, lies on the beach string in sequence facing a strong sea wind. Such a scene reflects the feature of Chayi before Winter Solstice (the shortest day of the year) arrives. Chayi has a long history of making dried mullet roe and therefore develops a mature technology to assist the incubation of mullet roe in the fishing pond. The medium wet and soft mullet roe appears to be in hue of crimson, yellow and transparent. Dabbed it with rice wine, placed into the oven to roast for a while, and then go with sliced radish and garlic. Meanwhile, warm a glass of good wine. What a luxurious pleasure during the freezing cold winter time!

【白蝦】Penaeus vannamei

學名: Letopenaeus vannamei

世界上三大養殖蝦種之一,對環境的耐力、疾病抵抗力與低鹽度的滲透調節能力均佳。蛋白質及維生素A及磷、鈣等含量最為豐富。殼薄質嫩、肉香甜,適白灼或蒸食。
Penaeus vannamei is one of the three major shrimps cultured in the world. It has excellent endurance, resistance towards diseases and osmotic adjustment of low salinity. Besides, it consists of rich nutrients such as protein, Vitamin A, phosphorous, and calcium etc. The shell of Penaeus vannamei is thin and tender, its meat delicate and taste the best when simmered or steamed.

【虱目魚】 Milk Fish

學名: Chanos Chanos

產區:嘉義、台南、高雄

虱目魚在東南亞周都很活躍,台灣主要產於雲林縣以南的淡、鹹水魚塭中,稱之為南台灣的家魚,十分切合。虱目魚內味鮮美多刺,含豐富的動物性蛋白質,煎烤香味四溢,國內發展出無刺魚肚,煮湯膾炙人口!
Production sites: Chiayi, Tainan and Kaohsiung

Milk Fish is well known in Southeast Asia and primarily raised in the fresh or saline water fishing ponds (under the longitude of Yunlin’s southern part). It is generally referred as House fish in the southern Taiwan, which is a statement precisely elaborated. It’s been a pity that Milk Fish has too many bones yet contains rich animal proteins. Manufacturers having hired personnel to remove fish bones from the fish belly, it can be boiled or simmered. It’s a once-in-a-life time taste that is loved by all!

【鱸魚】Japanese Seaperch

產區:嘉義、雲林、彰化

鱸魚具有很好的動物性蛋白質,肉質又鮮美肥嫩是高經濟魚類,一般喜愛拿來做營養進補用。

Production sites: Chiayi, Yunlin and Changhua

Japanese Seaperch contains a high-quality animal protein and tastes delicate, fresh and soft. It is regarded as fish species of high economic value. Many people prefer to add some Chinese herbs to stew with the fillet for nourishing the weak, aged or pregnant.
