產地介紹:屏東位於台灣最南部的熱帶溫暖海域,養殖種類非常多樣化,水質優良又少汙染,可說佔盡天時地利與人和。縣內有七個養殖區。這裡發展先進的陸上超集約循環水養殖,又有專業的國家認證冷凍加工廠,因此每年出口量相當可觀!
Production site: Located in the southern tip of Taiwan, Pingtung enjoys good water quality and low-polluted environment. The aquaculture farmers also develop a hi-tech super intensive water recycle system. Furthermore, the frozen food processing factories receive an official certification. They have been annually producing huge amount of seafood commodities!

有長鰭及短鰭兩種。長鰭黃臘鰺早經台灣研究養殖成功耐寒性較低;短鰭黃臘鰺飼養抵抗力更強,攝氏10度的水溫還能成長,適合沿海箱網養殖。煮湯清蒸或紅燒都很鮮美。
Long Fin Yellow-wax Pampano has already been successfully cultured by Taiwanese aquarists. Nevertheless, this species has low cold endurance compared with Short Fin Yellow-wax Pampano. The latter is able to survive in the temperature of 10 Celsius degree and hence suitable to be raised in the floated Net Cage along the seashore. They both can be simmered, steamed or stewed and their flavors are incredible!

【赤鰭笛鯛】Red Striped Snapper

赤鰭笛鯛俗名叫做「紅雞仔」或「台灣紅」。魚體色鮮紅亮麗、肉質細嫩、細骨少,煮湯或乾煎清甜鮮美是養殖界的新寵。赤鰭笛鯛原喜棲息清澈流水但經過幾代的馴養,目前已能適應肥沃的水質,台灣擁有它最適合生長的水溫,十分適合集約式養殖。
The color of Red Striped Snapper is cadmium red and its meat tender, sweet and soft. Due to few fish bones, fresh and delicious taste when boiled or stir-fried, this species becomes a new trend of aquaculture. Red Striped Snapper likes to inhabit in natural running water. Even so, it gradually accommodates to the artificially fertile environment and fits perfectly into the super-intensive water recycling fish culture.

【石斑】Groupers

石斑魚素有「岩窟王」之稱。全世界約有400種,在台灣則以龍膽石斑、老鼠斑、馬拉巴石斑、老虎斑等最受消費者喜愛。石斑魚養殖地區集中於高雄及屏東地區,提供國內市場的魚種,主要為點帶石斑魚與瑪拉巴石斑魚,由於肉質細嫩鮮美,廣受全球消費者,尤其是華人地區的喜愛。
Groupers, universally acknowledged as the King of Grottos (i.e. small caves), have 400 species around the world. Certain breeds such as Giant Groupers, Humpback Groupers, Malabar Grouper   and Brown-marbled Grouper are particularly favored by consumers in Taiwan fishing market. Their fillet is delicate, fresh and soft and welcomed by all the gourmets (especially Chinese people) as a consequence.

【泰國蝦】Giant River Prawn

Giant River Prawn就是泰國蝦,是淡水蝦中最大型且具經濟價值者,世界各國都有養殖,肉質鮮美。台灣自1970年開始養殖,成果相當豐碩,是活蝦市場及蝦釣場中的寵兒。水煮、蔥爆及燒烤皆可。
Giant River Prawn, also known as Macrobranchium rosenbergii, is the largest freshwater shrimp of topmost economic value. It has been introduced into Taiwan since 1970 and produces an abundant amount of harvest, becoming a hit in the shrimp market and fishing ponds. Due to the high quality of the fillet, it can be boiled, fried with green onions, grilled or roasted, then served to the guest.

【龍膽石斑】 Giant Grouper

學名: Epinephelus Lanceoletus

產區:屏東

肉質鮮美,是老饕口中之極品。在日本、南韓、東南亞與華人地區都很受歡迎。在日本尤其以補品著稱,相撲及拳擊選手等賽前喜歡藉此增強耐力與體力。

Production sites: Pingtung

Giant Grouper is so delicious that the gourmets claim it to be the exclusive and heavenly taste. It is popular in Japan, South Korea, East-Southern Asian and any residence that Chinese domesticated for good. Japanese sumo wrestlers and boxers enjoy having its fillet to improve their endurance and physical strength before contests.

【草蝦】Giant Tiger Prawn

學名: Penaeus Monodon

產區:宜蘭、彰化、嘉義、台南、高雄、屏東

台灣最有代表性的蝦種,除海洋撈捕外,養殖也是大宗,多以活蝦上市。草蝦的味道鮮美香脆,無論清蒸、蔥爆、椒鹽或燒烤都好吃。

Production sites: Yilan, Changhua, Chiayi, Tainan, Kaohsiung and  Pingtung

Giant Tiger Prawn is the most representative species of all shrimps. It can be harvested from the ocean and also from the aquaculture pond, mainly sold in flesh into the market. Despite of being steamed, fried with green onions, baked with spicy salt grilled or roasted , the taste of Giant Tiger Prawn is delicate and crispy.

【白蝦】Penaeus vannamei

學名: Letopenaeus vannamei

世界上三大養殖蝦種之一,對環境的耐力、疾病抵抗力與低鹽度的滲透調節能力均佳。蛋白質及維生素A及磷、鈣等含量最為豐富。殼薄質嫩、肉香甜,適白灼或蒸食。
Penaeus vannamei is one of the three major shrimps cultured in the world. It has excellent endurance, resistance towards diseases and osmotic adjustment of low salinity. Besides, it consists of rich nutrients such as protein, Vitamin A, phosphorous, and calcium etc. The shell of Penaeus vannamei is thin and tender, its meat delicate and taste the best when simmered or steamed.
