產地介紹:近百年來雲林人累積了相當經驗製作烏魚子;烏魚捕撈量減少之後,雲林引進純海水養殖烏魚也獲致成功,取得得烏魚子無論色澤或口感都不輸天然烏魚。雲林的牡蠣養在海上,滋養豐富的海水加快了雲林牡蠣成長的速度。至於鰻魚養殖更居全國養殖面積與輸日出口的大宗!
Production site:.For hundreds of years, Yunling residents learned how to produce dried mullet roe. The Natural Sea Water (NSW) also contributes to the success of raising grey mullet. The color or taste of cultured mullets.

Similarly, oysters are kept in the sea to preserve the nutrients. Eel farming is the major product being exported to Japan.

蒲燒在台灣和日本都是很暢銷的料理口味。從產地至熟食處理前,活鰻需要經過二天的畜養過程,經由水柱的按摩及鰻魚自清活動,再經衛生處理及蒸煮,加以大廚調理後真空包裝而成。保全了營養也封存了美味!
The Grilled Eel is a finest taste and flavor that can’t be missed by Taiwanese or Japanese. Before being processed, fresh eels will be transported to a fish preserve for two days. They accept the massage of water spray, evacuate their bowels, get processed, boiled and then vacuum-packed to ensure the hygiene and safety for retail sale. The final step is rendered to preserve the nutrition and the relish of sealed eels.

台灣鯛的脂肪含量低,富含維生素及多種重要礦物質,尤其是胺基酸較其他魚類更高。DHA及EPA都可有效預防文明病,是現在人很好的蛋白質來源。
Tilapia has low fat, high vitamins and many vital minerals for good health at every stage of our lives. Particularly, it contains a higher proportion of essential amino acids compared with other fish species. DHA and EPA help efficiently prevent the disease of civilization and sustain a great source of protein and other nutrients.





【馬蹄蛤】Hoof-shaped Clam

馬蹄蛤是台灣原生種的大蛤,生長在無汙染之天然海域,攝食含豐富蛋白質的藻類,所具有的豐富賀爾蒙及微量元素與胺基酸,可說是現代人養生聖品。
Hoof-shaped Clam lives in a non-polluted marine district and ingests the algae as its major food. In addition to the intake of protein-rich seaweed, this species itself contains high hormone, trace elements and amin acids. Modern people regard it as a crucial product to health maintenance and immune support.

【巧味芽/龍鬚菜】Seaweeds

口湖鄉海域水質潔淨,養殖業者引進海水養殖出優質的龍鬚菜,富含礦物質、鐵質、鈣質、碘...等營養成分,做成巧味芽捲、巧味芽丸、巧味芽鬆等調理材料爽口又健康;豐富的果膠成分是很天然美味、對身體又無負擔的健康食品!
The water of the Kaohu is clean and limpid. The aquarists apply the sea water to cultivate Seaweeds with excellent quality and key nutrients (e.g. minerals, iron, calcium and iodine). Other sub-products such as fish rolls/balls and dried shredded Seaweeds can be culinary ingredients. They contain rich ’colloidal’ that tastes good and burden-free to the bodies!

【文蛤】Hard Clam

學名: Meretrix Lusoria

產區:彰化、雲林、嘉義

台灣養殖用的文蛤據說是1931年從日本引進的,西岸各河口附近的半鹹淡水區都可以看到文蛤的蹤影。1970年開始,魚塭養殖文蛤就逐漸普遍了,養殖利益頗高。鮮美的文蛤用薑絲煮湯清香撲鼻;熱炒也是一道受歡迎的料理店美食。

The Hard Clam culture in Taiwan is allegedly introduced from Japan in 1931. It can be found everywhere in the brackish water zone neighboring the marine outfall. Ever since 1970, it became a common and profitable business to raise Hard Clams in the fishing pond. If added into boiling water and flavored with sliced ginger, the clams would taste incredibly dainty. Stir-fry it with quick fire is also a notable choice in the restaurant.
